Lamb Potato Rosemary
Ingredients
3 kg lamb
3 kg potatoes
200 ml olive oil
Salt, pepper, oregano, rosemary
Juice of 3 lemons
Method
1. Peel, wash, and cut the potatoes into thick, long wedges.
2. Marinate the potatoes and the lamb with olive oil, spices, herbs, and lemon juice.
3. Arrange everything neatly in a baking tray and roast in a preheated oven at 200°C for about 1½ hours. Halfway through cooking, add a glass of water and turn the lamb so it cooks evenly and becomes golden on both sides.
