A Majestic "Koulouma" Celebration on the Plateau
On Clean Monday, March 3rd, a hands-on Koulouma culinary workshop took place on the Lassithi Plateau, in the village of Agios Konstantinos.
The event was part of the Gastronomy Workshop by Gastronomicon, an initiative dedicated to showcasing culinary heritage through immersive, experiential activities. A gastronomic experience well on its way to becoming a cherished tradition!
Behind this unique experience stand Aliki Dialyna, an agrotourism expert, and Nikolaos Chomatas, chef and culinary instructor. With passion, dedication, and a deep respect for local culture, they share the richness of Cretan culinary tradition with every participant.
4 Steps
The seminar unfolded along a beautifully curated route, beginning in the narrow lanes of Agios Konstantinos, continuing through the organic farm BIOANNA, and culminating at the Holy Monastery of Krustalenia, where the cooking session and communal table took place.
Agro Tour
The experience begins with a guided walk through the village of Agios Konstantinos, giving participants the opportunity to discover, from the very first step, the authenticity, tradition, and history of the region. The journey continues into the fields, where visitors encounter the rich local flora and fauna.
Farm to Table
At the organic farm VIOANNA, participants witness the harvesting of fresh ingredients, learning about the philosophy behind traditional cultivation and the importance of organic farming in the Cretan diet. From vibrant vegetables and aromatic herbs to pure dairy products, every ingredient used throughout the day carries the signature of local production.
Gastronomy Workshop
The experience then moves to the kitchen of the Holy Monastery of Kroustalenia, where participants take part in a hands-on cooking workshop under the guidance of Chef Nikolaos Chomatas. The secrets of authentic Cretan cuisine are revealed through meticulous preparation and the shared process of cooking together.
Cretan Table
The day concludes at the monastery's communal table, where participants enjoy an authentic Cretan meal, blessed by the abbot, in an atmosphere filled with reverence and heartfelt hospitality. The shared table is more than just a meal—it's an experience that highlights the value of tradition, community, and genuine flavor.

The day's meal was a unique composition of traditional flavors, inspired by Cretan monastic cuisine and divine creation itself, highlighting the authenticity and nutritional richness of the local gastronomy.
The menu showcased the deep connection between tradition, fasting, simplicity, and the blessing of food. Each dish was a prayer in flavor, reflecting humility and the harmony of nature. Through traditional techniques and the finest local ingredients, every recipe reached gastronomic heights, bringing to the table a sense of spiritual fulfillment and culinary perfection.
