Meringue Crackers


Ingredients
150 gr egg whites
150 gr granulated sugar
110 gr powdered sugar

Method
1. In a bowl, combine the egg whites and granulated sugar. Place over a bain-marie and whisk until smooth and the mixture reaches 54°C. Then transfer it to a stand mixer.
2. Start whisking on low speed. Gradually add the powdered sugar and increase the speed. When the mixture begins to turn white, beat on high speed.
3. Once the meringue reaches the right consistency, spread it onto a silicone mat with a spatula to about 4 mm thick. Place it on a baking tray and dry it in the oven at 70°C for about 4 hours.
4. Break the meringue into the desired shapes and sizes, and store it in an airtight container.
