With Abbess Philothei

Cretan Chef and Culinary Arts Professor Nikolaos Chomatas, through his symbolic gastronomic project THE PATH OF GOD, continues his methodical exploration of the roots of authentic Cretan tradition.

A journey that meaningfully highlights the history, faith, and culture of the land. His next stop is the historic Holy Monastery Paliani, one of the most important spiritual centers of Crete. There, he meets the Abbess of the Monastery, Philothei Maragkaki, in a meaningful encounter focused on knowledge and religious tradition.

In the simple monastic kitchen, with respect and dedication to authenticity, they prepare two signature recipes of the monastery, the legendary Sfougato Paliani and the Agnes Fried Pies with Honey and Sesame, flavors that clearly reflect the identity of monastic life and Cretan hospitality.

For Nikolaos Chomatas, his personal project THE PATH OF GOD is a conscious cultural initiative aimed at highlighting the spiritual dimension of Cretan cuisine.

His meeting with Abbess Philothei Maragkaki clearly shows that monastic gastronomy is not limited to the act of eating, but expresses a complete way of life, based on moderation, gratitude, and respect for human nature.

In an era where gastronomy often focuses on spectacle, initiatives like this bring back the essence, where authenticity is found in simplicity, and true flavor is born where tradition, faith, and culture coexist with substance, truth, and respect.
